Birthday Cake for my FIL



Got a super short notice for FIL birthday dinner on Sunday. 6.00pm informed for dinner at 8.00pm the same day. I rushed thru' my recipe and settled down for this bake ... Chocolate pound cake. This is the only recipe that i've all the ingredient. Got no time for fancy frosting, this is the best look i could gather at such short notice.

Ingredients

150g Butter

150g Sugar

1/4 Tsp Salt

1 Tsp Vanilla Essence

60g Evaporated Milk

Sift together *

* 130g Cake Flour

* 30g Cocoa Powder

* 3/4 Tsp Baking Powder

* 1/8 Tsp Baking Soda

3 eggs

Method

1) Prehead oven to 170 C

2) In a bowl, using an electric whisk, cream butter and sugar till light and fluffy. Add in salt, vanilla essence and evaporated milk, whisk till incorporated.

3) Add flour mix

4) Add in the eggs, 1 at a time, whisk well. Pour the mixture into the prepared pan and bake at 170 deg.C for 1 hour.

Oreo Cupcakes

Smell nice, when baked. Getting ready for Saturday ...

Original recipe from Crazy About Cupcakes. Here's the already modified recipe.

Ingredients
113 gm salted butter
1 cup milk
1 tsp vanilla extract
2 1/4 cups plain flour
1 tbsp baking powder
1 1/2 cup castor sugar
4 small egg whites
1 cup oreo (approx 10 pcs), lightly crushed

Method
  1. Preheat oven to 180C
  2. In a large bowl, cream together the butter, milk and vanilla until fluffy (but i can't reach this stage and it got quite messy using the electric mixer)
  3. In a separate bowl, mix together the flour & baking powder.
  4. Add the dry ingredients to butter mxiture. Mix until integrated.
  5. Stir in the sugar (I decided to change from electric mixer to manual hand power instead. Things got very messy here)
  6. Add the egg whites. Beat for 2 more minutes and stir in the crushed cookies.
  7. Fill the cupcake liners 3/4 full.
  8. Bake for 2o mins

Apple from Amoy High Class Fruit Stall


A worth buy from the High Class Fruit Stall - 3 big apples for S$4. Not sure if it's really worth it, but the look of it really tempt me to eat it up.

Cheesecake Brownie

Here's my bake last night ...

Need to utilise my cream cheese before expiry. Best enjoy brownie with ice cream (sinful though)

This may not be the best, just in case you care to try...

Ingredients :

113gm butter
120gm unsweentened baking chocolate

1 cup of sugar
2 eggs
1 cup of plain flour
1 tsp of vanilla
½ tsp of baking powder
¼ tsp of salt

For the topping :
220gm cream cheese
1 egg
1/3 cup of sugar

Heat oven to 180c. Using 8 x 8 inch square baking pan. Set aside.
Melt butter and chocolate in a saucepan over low heat (using double boil method), stirring occasionally, until smooth (4 to 7 minutes). Remove from heat.
Stir in sugar and vanilla. Add eggs, one at a time, mixing well after each addition. Add flour, baking powder and salt; mix just until all ingredients are moistened and brownie mixture is smooth.
Spread brown mixture into prepared baking pan.
For the topping beat the cheese, egg and sugar until smooth. Drop the cream cheese mixture on top of the brown batter. Swirl together using a knife or skewer.
Bake for 25 to 33 minutes or until brownies just begin to pull away from side of pan. (I took longer time to bake for this) Cool completely and then cut into bars and serve.

Home Made Bun

Here's my 2nd attempt for Bun making using the soft bread recipe. This time round i've reduced the Instant Yeast from 4 tsp to 3 tsp. Using the same dough i've created the all time favourite ... Cheesy Stick and 2 New flavour ... Luncheon Meat Bun & Hot Dog Roll. The kids prefer the yummy cheesy one instead. It tooks me 7 hrs to get these bun up ... from 4-11pm. Yawn ...

I've baked 6 cheesy sticks, 6 luncheon meat bun, 5 hotdog rolls and 2 mini cheese bun. What do i have left at home now ???? probably 1 mini cheese bun, 1 hotdog and 3 luncheon meat (b4 i'm out to work) All the rest were all snap up.

Hot from the Oven - Milo Chocolate Chips Muffins

Bake this last night-Friday for Mei Mei to bring on Saturday to share with her friends & teachers. At least no morning baking this saturday, managed to laze on my bed a little longer Zzzzzzz .....

Yummy ... the kiddos love it ... due to the dark & white chocolate chips. I bake a qty of 24pcs for a good give away. It's a joy to share especially seeing the kids enjoying their food. What a sense of satisfication in me.

Ingredient

  • 270g self raising flour
  • 30g milo
  • 1 tsp baking powder
  • 1tsp cocoa powder
  • 50g butter
  • 80g castor sugar
  • 2 eggs, beaten
  • 1 cup milk
  • 1tsp vanilla essence
  • 75g milk & 75g chocolate chips

Method

  1. Mix flour, milo, cocoa powder & baking powder into a bowl
  2. rub in butter until the mixture resembles fine breadcrumbs
  3. stir in sugar and chocolate chips in the centre
  4. add in egg, milk and vanilla essence and mix well quickly do not over mix
  5. bake at 200c for 15-20 mins

Cheese Crunch

Here's the long awaited recipe for the Cheese Cookies ...

Ingredient A
150g butter
90g sugar
1/4 tsp salt

Ingredient B
1/2 egg

Ingredient C
3 slices cheddar cheese (cut into cubes) - I used 90g shredded chedder cheese
200g plain flour
1tsp baking powder
1/2tsp chilli powder - I omitted this

Method
  1. Cream Ingredients A until light. Add in Ingredients B, cream until smooth.
  2. Add in Ingredients C, mix until well incorporated.
  3. Shape it round. Place it onto a greased pan and press it with a fork.
  4. Bake at 170c for 20 minutes.

Imprompt Birthday Cake ~ Brian


Just made this in a very quick time ~ Chocolate Sponge Cake (My 1st attempt making sponge cake). Found all the ingredients at home, just bought some fresh eggs from NTUC that's all. Cool looking huh, even the decor are all found from home (not bad hor)

Despite all these ... Importantly today is my ah boy 8th Birthday ! He is celebrating it with his beary.
