Corn Bun



Finally got my baking machine power on last night. I had stopped baking for 1 week plus since son & me were sick.

To have a kick start, i bake Corn Bun using the Corn Bread recipe with the aid of the Bread Maker. The texture of the bread is good, only set back is the recipe only good for 9 pcs. All allocated out in no time, mainly Mei Mei need to bring 3 for her MS teachers.

Recipe:-
1 egg
70g milk
25g sugar
5g salt
38g butter
250g bread flour
5g Instant Yeast
* 1/2 cup corn

Method
  1. Place all ingredient into the breadmaker in order except the corn.
  2. Corn to be place after 20 mins after BM kneading
  3. Remove dough out from BM, cover dough with cling wrap and stand for 1 hour
  4. Portion to 60g each and let it stand for another 10 mins
  5. Put each portion onto the baking tray and leave it in a warm temperature area for 45min so that the dough will raise further
  6. Finally brush on some egg wash
  7. Ready for oven baking at 190c for 12 mins

Big round moon 1 day after Moon Cake festival

An delay upload of the picture took on 15 Sep (Mon), a day after 八月十五Moon cake festival. The moon on that night was super big, clear and bright, can't help to take a shot after son asking. Shot taken at Holland V while bring Son to doctor after new medication took in the day. He got body reaction whereby the rashes was all over his body. Gonna take him back to review. That lead us to know now that ... he got Drug Allergy to * Anti-spasmodic (Colimix). Quickly was told to stop the medication and given new medicine to stop the rashes. Thankfully now he is well and bubbly again.

Moonies

Today bake - Snow Skin Mooncake

Join my bake if the recipe interest you out there. Very simple bake for the season. I did 2 different recipe test and later prefer my good old time favourite.

Ingredients
150g Kao Fen
250g icing sugar
50g Shortening
130ml cold water
1/4 tsp bananas essence

Filling
Salted Egg Yolk (Optional)
Lotus paste
Melon seeds (Optional)

Method

  1. Mix Kao Fen, icing sugar & shortening in a mixing bowl
  2. Add water & essence, knead into a dough
  3. Cut dough into about 50g each and wrap over lotus paste ball
  4. Press dough into mooncake mould and knock out for serving

Catch up posting - Tarts

Has been busy lately, here's the delay upload of my last week bake. I made different flavour tarts - Chocolate, Jam & Nutella. You could just get creative over what you could find at home.

Ingredient
125g butter
80g castor sugar
1 egg yolk
200g plain flour
20g corn flour
1/2 tsp vanilla essence

Method
  1. Beat well butter, sugar, egg yolk & vanilla
  2. Add in the rest of the ingredients
  3. Knead and roll it flat.
  4. Cut out using a flower shaped cutter
  5. Put it into a paper cups
  6. Bake in oven 170c 20mins (just keep watch as every oven vary)
  7. Cookies after cool put the filling in the centre and decorate to the way you like.
